What’s Cooking: Dilled Salmon Tartare

Although we served this at Thanksgiving, because of its ingredients, it also makes a perfect appetizer for Spring and Easter.

Every Thanksgiving, my daughter includes a new recipe to the menu. This year it was an appetizer, Dilled Salmon Tartare on Whole Grained Bread from Bon Appetit. It was quite a hit. She served it with an oaky Chardonnay and a salad of spring greens with an herb vinaigrette that mirrored the herbs used to marinate the salmon.  She found the whole grained bread slices already toasted at Trader Joe’s. The recipe serves 6 but is easily doubled.

Dilled Salmon Tartare on Whole Grain Bread

ingredients

   1/4 cup honey mustard

   1/4 cup mayonnaise

   1 (1-pound) piece frozen salmon fillet, thawed, cut into 1/4-inch cubes

   1/4 cup finely chopped red onion

   1/4 cup chopped fresh dill

   2 tablespoons drained capers, coarsely chopped

   2 tablespoons fresh lime juice

   2 tablespoons minced shallot

   2 teaspoons olive oil

   3/4 teaspoon coarse kosher salt

   1/2 teaspoon ground black pepper

   3 5x3x1/4-inch slices whole grain bread

preparation

Mix mustard and mayonnaise in small bowl to blend. Season to taste with salt and pepper. DO AHEAD Can be made 3 days ahead. Cover and refrigerate.

Mix salmon and next 8 ingredients in medium bowl. Cover and chill until cold, at least 30 minutes. DO AHEAD Can be made 4 hours ahead. Keep refrigerated.

Spread 1 tablespoon mustard mixture on 1 side of each bread slice. Cut each bread slice into 6 pieces. Divide salmon tartare mixture among bread slices. Transfer to platter and serve.

What’s Cooking: Sweet Potato Mash

I love sweet potatoes and not just at Thanksgiving. I like them baked, boiled and mashed and dipped in tempura batter and fried. They are great in breads and baked desserts. They are very nutritional, an excellent source of vitamin A and a good source of potassium and vitamin C, B6, riboflavin, copper, pantothetic acid and folic acid. Sweet potatoes are native to Central America, grown in the Southern US states since the 16th century and are in the same family of plants as Morning Glories. The plant is a trailing vine with a large tuberous root.

Sweet Potatoes are often confused with yams which are native to Africa and relate to lilies and grasses. Even though they are both flowering plants, botanically they are different.

The U.S. Department of Agriculture requires labels with the term ‘yam’ to be accompanied by the term ‘sweet potato.’ Unless you specifically search for yams, which are usually found in an international market, you are probably eating sweet potatoes!

A couple of Thanksgivings ago, my daughter decided to ditch the “traditional” candied version topped with marshmallow that would put a normal person into a diabetic coma and went “surfing” for something different. The recipe she found now makes it to our table more often than once a year. It is still sweet but not overwhelming. It’s great served as a side with pork or ham, as well as turkey. Nummy as a midnight snack with a little whipped cream, too.

Bourbon-Walnut Sweet Potato Mash

Ingredients:

   4 pounds red-skinned sweet potatoes

   1/2 cup whipping cream

   6 tablespoons (3/4 cup) butter

   1/4 cup pure maple syrup

   2 tablespoons bourbon

   1 1/2 teaspoons ground cinnamon

   1 teaspoon ground allspice

   3/4 teaspoon ground nutmeg

   1 cup walnuts, toasted, chopped

Preparaton:

Preheat oven to 350°F. Roast potatoes on rimmed baking sheet until tender, 1 to 1 1/2 hours. Cool slightly. Scoop flesh into large bowl; discard skins. Mash hot potatoes until coarse puree forms.

Heat cream and butter in heavy small saucepan over low heat until butter melts, stirring occasionally. Gradually stir hot cream mixture into hot potatoes. Stir in syrup, bourbon, and all spices. Season with salt and pepper.

DO AHEAD: Can be prepared 1 day ahead. Cover and chill. Rewarm in microwave. Sprinkle nuts over and serve.

What’s Cooking: Baked Rigatoni with Ham and Mushrooms

In case you still have a few slices of that ham left and are truly sick of ham sandwiches, don’t let it go to waste. Here’s an easy recipe that can make use of those last few slices.

Baked Rigatoni with Ham and Mushrooms

Ingredients:

* 1/3 oz. dried porcini mushrooms or 6oz. fresh button mushrooms

* 2 tablespoons unsalted butter, if using fresh mushrooms, plus 6 tbsp.

* 12 oz Rigatoni

* 1/3 cup all purpose flour

* 2 1/2 cups of milk (low fat is fine)

* pinch of freshly grated nutmeg

* salt and freshly ground pepper to taste

* 4 oz of Fontina or Swiss cheese, cut into julienne strips

* 6 oz ham, roughly chopped

Preparation:

If using porcini, place in a bowl with lukewarm water ans soap until softened about 30 minutes. Drain. squeeze out excess water and chop finely; set aside. . If using fresh mushrooms, cut off and discard the stems, wipe clean with a towel and thinly slice. In a frying pan over medium heat, melt 2 tbsp. butter. Add the sliced mushrooms and sauté fir 2 minutes. Remove from heat.

 In a large pot bring 5 quarts of salted water to a boil. Add rigatoni and cook for about 6 minutes; they should be very al dente. Drain the pasta and transfer to a bowl. Ass 2 1/2 tbsp of the butter and toss well.

Preheat an oven to 350 F. In a sauce pan melt 2 1/2 tbsp. of the butter over medium heat. Add the flour and stir until smooth, about 2 minutes. Stirring constantly, gradually add the milk. Continue to stir until it thickens and is smooth and creamy, about 10 minutes. Remove from the heat, ass the porcini or fresh mushrooms, sprinkle with the nutmeg and stir well. Season to taste with salt and pepper.

Grease an 8 by 12 inch oven proof dish with the remaining butter. Arrange 1/3 of the rigatoni in the dish. Sprinkle one third of the cheese and ham over the top and spoon on one third of the sauce. Repeat the layers in the same order two more times, ending with sauce.

Place in the oven and bake until heated through and bubbly, about 20 minutes. Serve at once.

Serves 6

What’s Cooking: Ham Bone

The holiday is over, besides the candy, you most likely have a refrigerator full of leftovers and one of them may be a ham bone. Don’t throw it out just yet, there is still another use for it, soup. Served with a salad and a hearty bread, these soups make a hearty, nutritional meal meal that is also budget conscious. Accompanied by a good beer, this is real comfort food on a chilly Spring evening.

One soup recipe that uses a ham bone has been served in the US Senate for over 100 years. The current version does not include potatoes but I like tradition in this case. I also would add a cheese clothe sachet of bay leaf, parsley, peppercorn and thyme for flavor. I also use chicken broth in place of the water. You can play with your own seasoning to taste.

United States Senate Bean Soup

1 lb. dry navy beans

1 ham bone with meat

Soak beans overnight in 3 quarts water. Drain. In a large soup pot put ham bone and beans. Add 2 quarts cold water and simmer for 2 hours. Add:

4 cups mashed potatoes, minimum (more makes soup thicker)

3 medium onions, chopped

2 garlic buds, minced

2 stalks celery, chopped

4 tbsp. fresh parsley, chopped

1 tsp. salt (optional)

1/4 tsp. pepper

Simmer all for 1 hour more.

And then there is the real traditional that has been around forever. There are numerous versions of this recipe, this one uses ham hocks but the left over ham bone can be substituted.

Split Pea Soup with Pumpernickel Croutons

Ingedients:

  2 meaty ham hocks (1 3/4 lb total)

   16 cups water

   4 large carrots

   1 large onion, chopped

   2 celery ribs, chopped

   5 tablespoons olive oil

   1 lb dried split peas (2 1/4 cups), picked over and rinsed

   1 teaspoon table salt

   1/4 teaspoon black pepper

   5 cups 1/2-inch cubes pumpernickel bread (from a 1 1/4-lb loaf)

   1 teaspoon kosher salt

   1 cup frozen peas (not thawed)

Preparation:

Simmer ham hocks in 16 cups water in a deep 6-quart pot, uncovered, until meat is tender, 1 1/2 to 2 hours.

Transfer ham hocks to a cutting board and measure broth: If it measures more than 12 cups, continue boiling until reduced; if less, add enough water to total 12 cups. When hocks are cool enough to handle, discard skin and cut meat into 1/4-inch pieces (reserve bones).

Chop 2 carrots and cook along with onion and celery in 2 tablespoons oil in a 6- to 8-quart heavy pot over moderate heat, stirring, until softened, 6 to 8 minutes. Add split peas, table salt, pepper, ham hock broth, and reserved bones and simmer, uncovered, stirring occasionally, until peas are falling apart and soup is slightly thickened, about 1 1/2 hours.

Put oven rack in middle position and preheat oven to 400°F.

While soup simmers, toss bread with remaining 3 tablespoons oil and kosher salt in a large bowl, then spread in 1 layer in a large shallow baking pan and bake until crisp, about 10 minutes. Cool croutons in pan on a rack.

Halve remaining 2 carrots lengthwise, then cut crosswise into 1/4-inch-thick slices. Remove bones from soup with a slotted spoon and discard. Add carrots and ham pieces to soup and simmer, uncovered, until carrots are tender, 10 to 15 minutes. Add frozen peas and simmer, uncovered, stirring, until just heated through, about 3 minutes. Season with salt.

Serve soup with croutons.

Cooks’ notes:

· Croutons can be made 3 days ahead and cooled completely, then kept in an airtight container at room temperature.

· Soup is best when made, without frozen peas, 1 day ahead (to give flavors time to develop). Cool completely, uncovered, then chill, covered. Reheat and, if necessary, thin with water. Stir in frozen peas while reheating.

Ham is salty. Whether its smoked or just fully cooked ham is salty. Since many people are trying to reduce the daily intake of salt, this is away to have your ham for Easter and eat your fill. I use chef Julia Child’s method to reduce the salt by boiling the ham first.

  • Remove all wrappings from the ham and wash it under cold water.
  • Place ham in a pot large enough to hold it and the boiling ingredients.

Add to the pot

  • 2 onions, pealed and quartered;
  • 2 carrots, cut in large chunks;
  • 12 parsley sprigs, 6 thyme sprigs, 1 bay leaf, 12 peppercorns, 3 cloves tied in cheesecloth to make a sachet d’épices.
  • Pour in one 750 ml. bottle of dry white wine and one quart of cold water.

Bring it to a boil skimming away any impurities off the top. Simmer 20 min per pound. Ham is done when internal temperature reaches 140ºF

Once cooked, removed from pot and let stand for 15 to 20 minutes before pealing away the skin, leaving the fat. With the tip of a very sharp knife, score the fat creating a diamond pattern. Keep warm by tenting with foil and a thick towel.

Pre-heat the oven to 450ºF

I don’t decorate the ham with anything, but I have used this recipe to glaze the ham while it bakes.

Ingredients

  • 1 cup of bourbon
  • 1 cup of cola, preferable Kosher Coke (no high fructose corn syrup)
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup honey
  • 1/4 cup dijon mustard
  • 2 sprigs of fresh thyme tied in cheesecloth to make a sachet d’épices

Combine all ingredients in a small sauce pan, simmering gently to dissolve the sugar. Reduce the liquid until thick and syrupy and liquid coats the back of a wooden spoon.

Place the ham fat side up on a rack in a large roasting pan. Pour and brush the glaze over the ham. Place in the oven on the lower rack; roast 15 to 20 minutes until lightly browned. If using glaze, brush on more after first 10 minutes of cooking.  When done, remove from oven, tent with foil and a thick towel. Let stand for 20 to 30 minutes before slicing.

You will be amazed at how tender and tasty this ham will be and nowhere near as salty.

Passover Desserts

Passover begins on Friday evening. Like all Jewish holidays it’s focus is on community, family and food, especially the food. I was born Jewish and raised in an ecumenical household that celebrated both Christian and Jewish holidays. I never kept a kosher home, although my first and current mothers-in-law did.

My favorite part of most meals is dessert. I’ve been the desert lady since I started a catering company some years back as a hobby. Here are some recipes for Passover deserts that I recently found and I’m trying this year.

Chocolate Caramel Macarons

Instead of the typical buttercream or ganache filling, there’s a crunchy caramel candy layer in between the cocoa layers. These are fudgy little confections more like candy than cookies. They also happen to be both gluten-free and can be kosher for Passover, if you use kosher-for-Passover confectioners’ sugar.

Created by a hotel chef in the 1920s in honor of the Russian ballet dancer Anna Pavlova during one of her tours to Australia or New Zealand, a pavlova is a cake-shaped meringue with a soft and marshmallowy center and crisp outer shell, usually topped with whipped cream and fresh fruit.

In this gorgeous chocolate version, cocoa powder and bittersweet chocolate are folded into the meringue – which makes it deliciously fudgy – and mascarpone cheese (Italian cream cheese) is added to the whipped topping. It’s a wonderfully light, gluten-free dessert.

So now that you’ve finished dying eggs naturally using onion skins, what do you do with all those onions? Make French Onion Soup, bien sûr!

French onion soup in France is served as the traditional French farmer’s breakfast or the end of the day repast for the late night café and theater crowd. It was made famous in the great open market of Les Halles in Paris where hungry truckers converged from all over France with their fresh produce. On my first visit to Paris in 1966, I made a late night visit to Les Halles with some friends to savor the tradition and practice my very rusty college French. The truckers and waiters in the little café we “invaded” were quite friendly and chuckled as they good heartedly corrected my pronunciation. Needless to say, je parle français bien mieux maintenant. Les Halles was torn down in 1971 and replaced with a modern shopping area, the Forum des Halles. But I digress, we are here for the food.

My favorite recipe is from Bernard Clayton, Jr.’s The Complete Book of Soups and Stews with some variations. It is from a restaurant near the Halles Metro station. M. Calyton’s version uses a hearty homemade beef stock which is time consuming to make. I found that either Swanson’s or College Inn Beef Broth produces a good result, just reduce the salt. The low sodium broth didn’t produce the hearty broth that’s needed to compliment the flavor of the caramelized onions and the cheese.

You will need some “special” equipment for this soup: individual oven-proof bowls, enough to hold 1 1/2 to 2 cups. I have the bowls with a handle and a lid that serve double duty for baked beans, and other soups and stews. You will also need cheesecloth for le sachet d’épices, that’s a spice bag for you Americans ;-), and butcher’s twine or some other cotton twine. Those items can be found in the gadget aisles of most large grocery stores.

What’s Cooking: Mardi Gras a Carnivale of Food

Mardi Gras, Carnivale, Shove Tuesday, Fat Tuesday, what ever you call the day before the Christian Lent, it’s all about food, fatty food. Eat, drink and be merry for at midnight you must fast and give up your favorite vice, except on Sunday, for the next forty days, that is if you’re a Christian. We Pagans just raise an eye brow and enjoy the party and the FOOD!

Traditional foods are all rich, fatty and sweet. Gumbo, jambalaya, red beans and rice, catfish, po’ boys to pancakes and beignets are all calorie laden delights that will need 40 days of fasting and exercise to shed the pounds. So to start the party off, here are a few recipes for a hearty gumbo, desert, something to drink and, of course, King Cake. Tradition is the person who discovers the tiny plastic or porcelain baby in his or her slice is branded as the provider of the next cake. In pre-Christian societies whoever found a coin or bean in a special cake was crowned King for the year; afterwards, he was sacrificed to ensure a good harvest – which makes having to pony up for the next cake seem like a mighty good deal.

Chicken and Sausage Jambalaya

This recipe serves 10 but can be cut in half

Ingredients:

   12 ounces applewood-smoked bacon, diced

   1 1/2 pounds smoked fully cooked sausage (such as linguiça), halved lengthwise, cut crosswise into 1/2-inch-thick semi-circles

   1 pound andouille sausages, quartered lengthwise, cut crosswise into 1/2-inch cubes

   1/2 pound tasso or smoked ham (such as Black Forest), cut into 1/2-inch cubes

   1 1/2 pounds onions, chopped (4 to 5 cups)

   2 large celery stalks, chopped

   1 8-to 10-ounce red bell pepper, coarsely chopped

   1 8-to 10-ounce green bell pepper, coarsely chopped

   6 large skinless boneless chicken thighs, cut into 1- to 11/2-inch pieces

   2 tablespoons paprika

   1 tablespoon chopped fresh thyme

   1 tablespoon chili powder

   1/4 teaspoon (or more) cayenne pepper

   3 10-ounce cans diced tomatoes and green chiles

   2 1/2 cups beef broth

   3 cups (19 to 20 ounces) long-grain white rice

   8 green onions, chopped (about 2 cups)

   Chopped fresh Italian parsley

Preparation:

Position rack in bottom third of oven and preheat to 350°F. Cook bacon in very large pot over medium-high heat until brown but not yet crisp, stirring often, 8 to 10 minutes. Add smoked sausage, andouille, and tasso. Sauté until meats start to brown in spots, about 10 minutes. Add onions, celery, and bell peppers. Cook until vegetables begin to soften, stirring occasionally, 10 to 12 minutes. Mix in chicken. Cook until outside of chicken turns white, stirring often, 5 to 6 minutes. Mix in paprika, thyme, chili powder, and 1/4 teaspoon cayenne. Cook 1 minute. Add diced tomatoes with chiles and broth; stir to blend well. Add more cayenne, if desired. Mix in rice.

Bring jambalaya to boil. Cover pot. Place in oven and bake until rice is tender and liquids are absorbed, 45 to 48 minutes. Uncover pot. Mix chopped green onions into jambalaya; sprinkle jambalaya with chopped parsley and serve.

Buttermilk Beignets

This will make 48 beignets

Ingredients:

   3/4 cup whole milk

   1 1/2 cups buttermilk

   4 teaspoons active dry yeast

   2 1/2 tablespoons sugar

   3 1/2 cups bread flour plus extra for flouring work surface

   1/2 teaspoon baking soda

   1/4 teaspoon salt

   Peanut oil for frying

   Confectioners’ sugar for serving, as much as you think you’ll need-then double that!

Preparation:

Heat the milk in a small saucepan over medium-high heat until small bubbles form at the surface. Remove from the heat, add the buttermilk, and then pour into a stand mixer bowl. Whisk in the yeast and the sugar and set aside for 5 minutes. Add the flour, baking soda, and salt, and mix on low speed, using a dough hook, until the dry ingredients are moistened, 3 to 4 minutes. Increase the mixer speed to medium and continue mixing until the dough forms a loose ball and is still quite wet and tacky, 1 to 2 minutes longer. Cover the bowl with plastic wrap and set the dough aside in a draft-free spot for 1 hour.

Pour enough peanut oil into a large pot to fill it to a depth of 3 inches and bring to a temperature of 375°F over medium heat (this will take about 20 minutes). Line a plate with paper towels and set aside.

Lightly flour your work surface and turn the dough out on it. Sprinkle the top of the dough with flour, gently press to flatten, fold it in half, and gently tuck the ends under to create a rough-shaped round. Dust again and roll the dough out into a ½-inch- to ¹/³ inchthick circle. Let the dough rest for 1 minute before using a chef’s knife, a bench knife, or a pizza wheel to cut the dough into 1 1/2-inch squares (you should get about 48).

Gently stretch a beignet lengthwise and carefully drop it into the oil. Add a few beignets (don’t overcrowd them, otherwise the oil will cool down and the beignets will soak up oil and be greasy) and fry until puffed and golden brown, turning them often with a slotted spoon, for 2 to 3 minutes. Transfer to the prepared plate to drain while you cook the rest. Serve while still warm, buried under a mound of confectioners’ sugar, with hot coffee on the side.

Make ahead:

The beignet dough can be made up to 8 hours in advance of frying. Line a baking sheet with parchment paper and spray it with nonstick cooking spray. After cutting the dough, place the beignets on the paper and place another greased sheet of parchment paper, sprayed-side down, on top. Wrap the entire baking sheet with plastic wrap and refrigerate. The beignets can be fried straight from the refrigerator.

King Cake

Ingredients:

For the Cake:

   1/3 cup milk

   1 package active dry yeast

   2 1/2 cups bread flour, plus more for dusting

   2 large egg yolks, plus 2 eggs

   3 tablespoons granulated sugar

   Finely grated zest of 1 lemon

   1 teaspoon salt

   1/2 teaspoon freshly grated nutmeg

   1 1/2 sticks unsalted butter, melted and cooled, plus more for greasing the bowl

For the Filling and Glaze:

   1/2 cup golden raisins

   1/4 cup bourbon

   3/4 cup packed dark brown sugar

   2/3 cup toasted pecans, chopped

   1 teaspoon vanilla extract

   1 teaspoon ground cinnamon

   2 teaspoons grated orange zest

   1/4 teaspoon salt

   1 dry bean or plastic King Cake baby (available at party-supply stores or mardigrasday.com)

   1/2 cup confectioners’ sugar

   Purple, green and gold sanding sugar, for decorating

Directions:

Make the cake: Heat the milk in a saucepan until scalding; transfer to a food processor, add the yeast and pulse to combine. Add 1/2 cup flour and the egg yolks; process to combine. Pour the remaining 2 cups flour evenly over the yeast mixture; do not process. Put the lid on; set aside for 90 minutes.

Add the 2 whole eggs, granulated sugar, lemon zest, salt and nutmeg to the food processor; process to make a slightly textured dough, about 1 minute. With the machine running, slowly add the butter to make a smooth, sticky dough. Transfer the dough to a lightly buttered bowl and cover tightly with plastic wrap; let rise in a warm place for 3 hours. Turn the dough out onto a clean surface and knead briefly; form into a ball and return to the bowl. Cover tightly with plastic wrap and refrigerate for 8 hours or overnight.

Make the filling:

Plump the raisins in the bourbon in a small saucepan over medium heat. Remove from the heat and add the brown sugar, pecans, vanilla, cinnamon, orange zest, salt and the bean or plastic baby; mix until combined and set aside.

On a floured surface, roll the dough into a 20-by-7-inch rectangle, with the long edge facing you. Spoon the filling in an even layer over the dough, leaving a 1-inch border along the top and bottom. Fold the bottom and then the top edge over the filling to make a tight roll; pinch to seal. Transfer the roll seam-side down to a parchment-lined baking sheet; tuck one end into the other to form a ring. Cover loosely with plastic wrap and set aside in a warm place until the roll doubles in size, about 2 hours.

Preheat the oven to 350 degrees. Bake the cake until firm and golden brown, about 40 minutes. Cool on a rack.

Make the glaze:

Mix 3 tablespoons water with the confectioners’ sugar; brush 3 tablespoons glaze over the cake. Sprinkle with bands of colored sugar; drizzle with more glaze.

Hurricane

In the years since Katrina, the only welcome storms in New Orleans are the ones in a glass. Watch out for this fruity, gale-force rum concoction-more than one, and you’ll need to declare yourself a natural disaster.

Because the syrup is hard to come by (and artificially flavored) here is a substitute for it that was well received: a tablespoon of passion fruit sorbet (Häagen Dazs makes one) and a teaspoon of grenadine, per serving.

Ingredients:

   1 ounce light rum

   1 ounce dark rum

   1 tablespoon passion fruit syrup

   Juice of 1/2 lime

   1 teaspoon superfine sugar, or to taste

   Ice cubes

Preparation:

Mix all ingredients except ice in shaker. Stir to dissolve sugar. Add ice cubes, shake well, and strain mixture into a cocktail glass.

What’s Cooking: Potato Latkes

Hanukkah starts at sundown this Tuesday evening, along with the lighting of the first candle and spinning dreidels, Potato Latkes are a must. Here is my favorite recipe Reposted from December 4, 2010

It isn’t Hanukkah without Potato Latkes, those wonderful, crispy pancakes of shredded potato and onion served with apple sauce. It’s lot easier than when I was growing up in the 50’s. Back then we had to shred them with a metal grater that often resulted in some shredded knuckles, too. Food processors have saved a lot of knuckles and teary eye from shredding the onion.

This recipe is really simple. The trick to getting latkes that hold together and aren’t “oily” is the  potato. Idaho’s win, hands down.

Traditionally, according to kosher law, when latkes are served with a fish meal they are fried in oil and served with sour cream. If they are served with meat, they are fried in chicken fat and served with apple sauce. Since, I haven’t kept a kosher kitchen in over 40 years, I fry the latkes in oil and serve both apple sauce and sour cream.

Because this recipe has no flour or egg, the latkes are more delicate and lacy. These are best served when they are fresh from the pan, so, we take turns making them all during the meal. It can actually be fun.

Pure Potato Latkes

  • 4 large Idaho potatoes, about 2 1/4 lbs.
  • 1 large onion, peeled
  • 1/2 teaspoon of salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup canola oil

In a food processor with a coarse shredding disc or o the large shredding hole of a hand grater, shred the potatoes. Squeeze them well to rid them of as much water as possible and place them in a bowl. I use a cotton dish towel to squeeze the water out. it gets them really dry. Shred the onion and add to the bowl. Add the salt and pepper. Mix well. More water will be exuded and should be squeezed and drained thoroughly.

In a large heavy frying pan (a 12 inch iron pan works best), over medium heat, heat 2 tablespoons until a slight haze appears on the surace of the oil. Drop about 1/4 cup of the mixture into the oil, flattening slightly with the back of a spoon Leave a little pace between the pancakes for ease in turning. They should be about 2 1/2 inches in diameter and will flatten as they cook.

Cook about 7 minutes or until the edges turn golden brown. Flip and cook another 5 to 7 minutes or until the other side is golden brown. If the oil starts smoking or the latkes brown too quickly, reduce the heat and briefly remove the pan from the heat. Remove the latkes and drain on layers of paper towels Continue with remaining mixture adding 2 tablespoons of oil with each batch.

Serve with apple sauce and sour cream.

What’s Cooking: Sugarplum Bread

In Autumn, the appearance in grocery stores of stacks of candied fruit and mountains of nuts in all their wonderful variety is a sure sign of the approach of the holidays. As the days grow short and the nights grow cool preparations for a joyous time of baking begins.

My daughter is the bread baker but Sugarplum Bread is the one I enjoy making, too. This sweet bread studded with candied fruit is not as heavy as fruit cake. It is topped with a white icing glaze and decorated with red and green cherries to look like clusters of berries. It is a treat for breakfast or in the afternoon with tea. I make small ones baked in large muffin tins, decorated and wrapped in colored plastic wrap tied with ribbon as gifts for guests.

The following recipe is a rich dough flavored with nutmeg, candied fruit and peel, and raisins

Candied fruit would have melted in the summer heat and its sweetness would attract ants but it keeps well in the freezer. After the holidays, when the price is reduced for clearance, if you have space in your freezer buy a supply. It assures that you’ll have candied fruit on hand in the months when it can’t be found in the market.

Thoroughly Modern Meatless Mince Pie

Mince pie is a old holiday tradition that can be traced back to 13th century when European crusaders returned from the Middle East with recipes for meats, fruits and spices. Mincing was a way of preserving meats without salting or smoking. The pie has been served at royal tables and, at one time, was banned by the Puritans since it was a symbol of the Pagan Christmas celebration.

Traditional mincemeat pie contains shredded meat and suet along with fruits and spices and cooks for hours. Mostly made with beef, there is a record of a recipe that used whale meat.  Today, most cooks buy mince in a jar, like Cross & Blackwell or None-Such, to make pies and small tarts. I use to do that as well, adding chopped apples, walnuts and extra brandy.

Several years ago, I came across recipe for a meatless mince full of apples, dried fruits and lots of spices. It cooks over low heat for about ninety minutes filling the house and the neighborhood with its spicy aroma. This recipe calls for pippin apples but MacIntosh, Granny Smith or any pie variety of apple is a fine substitute. I use a combination. It can be made a week or so ahead of time and kept refrigerated in an airtight container. The recipe will make one pie or about a dozen medium tarts. I like the tarts even though it’s more work making the crusts. For the top crust, I make decorative cutouts with small cookie cutters, shaped like leaves and acorns. I’ve also just made a few cutouts in the top crust and surrounded the pie edge with the dough cutouts.

Modern Mince Pie

Ingredients:

   3 1/2 pounds small pippin apples (about 7), peeled, cored, chopped

   1/2 cup chopped pitted prunes

   1/2 cup golden raisins

   1/2 cup dried currants

   1/2 cup firmly packed dark brown sugar

   1/4 cup unsulfured (light) molasses

   1/4 cup brandy

   1/4 cup orange juice

   1/4 cup (1/2 stick) unsalted butter, cut into pieces

   2 tablespoons dark rum

   1 tablespoon grated orange peel

   1 teaspoon grated lemon peel

   1 teaspoon ground cinnamon

   1/4 teaspoon ground cloves

   1/4 teaspoon ground allspice

   1/4 teaspoon ground nutmeg

   Pinch of salt

Preparation:

Combine first 17 ingredients in heavy large saucepan or Dutch oven. Cook over low heat until apples are very tender and mixture is thick, stirring occasionally, about 1 1/2 hours. Cool filling completely. (Can be prepared up to 1 week ahead. Cover and refrigerate.)

Position rack in lowest third of oven and preheat to 400°F. Roll out 1 pie crust disk on lightly floured surface to 13-inch-diameter round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 3/4-inch overhang. Fold overhang under crust so that crust is flush with edge of pie pan. Crimp edges with fork to make decorative border. Spoon filling into crustlined pan, gently pressing flat.

Roll out second disk on lightly floured surface to 13-inch round. Cut out about 28 three-inch leaves using cookie cutter. Press leaves lightly with tines of fork to form vein pattern. Brush bottom of 1 leaf with milk. Place leaf atop mince, overlapping crust slightly and pressing to adhere to crust. Continue placing leaves atop pie in concentric circles, overlapping edges slightly until top of pie is covered. Brush crust with milk. Bake until crust is golden brown and mince bubbles, about 40 minutes. Cool completely. Serve pie with rum raisin ice cream if desired.

(To make this recipe vegan substitute light olive oil for the butter.
