What to Cook This Weekend

Good morning. You going leaf-peeping tomorrow? Picking some apples? Gathering pumpkins, gourds, a thatch of dried corn to tie to the porch or fire escape in celebration of the harvest and this nation’s agrarian past? I imagine the coming election has you rattled, and there’s bad news abroad as well. But this is high agritainment season, people. Get in the car!

I’ll take the apples, and any small cooking pumpkins you can find. I want to make Florence Fabricant’s recipe for pumpkin soup with ancho and apple this weekend. I want to dial in my pie crust technique and to bake one of our dozens of recipes for apple pie.

Or, check that, one of our dozens of recipes for pumpkin pie.

Grilled Cheese Sandwich

You can use any melting cheese, such as American, Muenster or Swiss, but not too much: part of the perfection here is in the proportion of bread to cheese.

Torrisi Turkey

The roast turkey breast that Rich Torrisi and Mario Carbone serve for lunch at their restaurant Parm in New York City is about the moistest, most luxuriously flavorful turkey available on the planet
